Coriander
A dual purpose annual herb grown for its seeds or fresh young leaves. The seeds are delicious in cakes and when crushed, add an orangey flavour to meat dishes. The young leaves are often called 'Cilantro'; finely chop and add to chicken soup to give it a Latin touch or soak the crushed seeds in hot water and add the liquid only to cubes of pork simmering in tomatoes for a real Mexican flavour. Height 90cm (3ft).
Marjoram
Cooking: Mild and sweet it is delicious in stuffings, soups, stews, omelettes, cheese dishes, fish sauces and salads. Sprinkle over pork, mutton, liver and veal before roasting and add to melted butter to garnish vegetables.
Sage
Ideal for rich foods plus traditional sage and onion stuffing with duck and goose. A useful gargle for sore throats. And don't forget that it also looks great in the perennial border. Companion Plant: Reputed to ward off carrot fly planted next to carrots. With cabbage said to improve their flavour and digestibility and to repel Cabbage Moth and Cabbage White Butterfly.
Thyme
Neat, compact plants, smothered in small light pink flowers and the foliage gives-off a lovely Thyme aroma. Stems or leaves may be picked and added to pot-pourri or herb sachets/pillows. A good plant for edging the kitchen garden, border, paths or rockery.
